Cancel the subscription through the provider that bills it. The Roblox account page or app-store subscription list should show where renewal is managed.

What to check, in order

Check the subscription's receipt and current renewal date. Identify Roblox web, Apple, Google, or another billing provider.

Use that provider's cancel control and read the confirmation and access end date.

Keep the confirmation email or screenshot and verify the subscription no longer shows as renewing.
One important limit
Deleting the app or account does not automatically cancel a store subscription.
